Cute Food Ideas with Flower Cookie Cutters

Before Easter I went to exhibition with some carving and cute food ideas. 

At the demonstration I showed my new cookie cutters in a shape of flowers. I love to use them for baking. On the picture you see sweet 'Flowers' tarts, 'Pyramid' sandwiches and mini pizza (tomato, salami and hot pepper). The Lemon Chicken was also a part of my class, it's very easy and quick garnish.

Russian Easter, Kulich and Samovar

5th of May we celebrated Easter in Russia. 

I had few ideas of Easter table decoration and stopped at traditional one, with no extraordinary carving :) 
I baked Kulich, a russian easter cake (to my surprise I succeeded,  it was very tasty, believe me!). To add "more traditions" to the party I unpacked my grandma's samovar. 


When I was a child, every summer I had been sent to my grandmother for summer holidays. Some things I loved about her house were her cute dog and a samovar (we had no pets and no samovar in our city appartment). 
We still keep that samovar stored in a board, almost forgotten. So I found it, cleaned and set on the table.

Recipe of Kulich was taken from "Recipes of Russian Cuisine" blog by Angelica, a Russian lady blogging from Italy. I've never myself baked Kulich before. This recipe is perfect, I made it easily. The recipe ingredients were enough for 3 cakes. 
We left one cake at home, the others were for gifts.

Russian Easter treats and games are Kulich and eggs exchange, eggs fights, making silly faces in the samovar (not sure it's a tradition :)) we did it when were children).

Huckleberry Tart With Apple Rose Garnish

Huckleberry tart
I found this easy recipe of the berry tart at TheScootaBaker
Roll out a sheet of puff pastry. Spread berries on the sheet surface and fold the edges like on the photo. I used frozen huckleberry sprinkled with sugar powder.

For the tart garnishing  I made roses of apple.
Quarter and core an apple. Slice it as thin as you can. Now you need to blanch the slices in the syrup.
Take 1/2 cup of sugar and 3 cups of water, bring to the boil. If you want to change a color of apple add a few drops of food coloring (or some berry juice). Boil for 5-7 minutes and take out to drain.

Lay the slices out to get a strip as on the picture.



Roll the strip up and form a rose. Do not roll it tightly, let the rose open its nice petals :)

Set the apple roses on the tart and enjoy your baking!

Lazy Pelmenys. Russian Food Recipe

The 1st of May was a holiday in Russia. I took my time to make a photo recipe. I recalled the recipe after reading Veggie Cheese Roll-ups at Kathleen's blog Step by Step in the kitchen. 
The recipe I'd like to share is a quick edition of the famous russian Pelmeny called Lazy Pelmeny.

I am not skilled in making a dough. But this time I succeed it to my surprise. 




For dough you need:
2 cup of flour,
1 egg,
1/2 cup of water 
salt

Volcano :)

I am mixing the dough and it seems to me a pleasant work :))

Prepare meat mince, add garlic and spices
Flat the dough

Spread the mince on the dough flat

Roll it up and cut into small parts

Add a sauce (water, mayonnaise, paprika or any spice)

Bake it for 30-40 minutes
Eat pelmenys with a mustard, pickles and sour cream. I love them with japanese vinegar gignger.

One-Bite Pizza. Valentine Day's Treat

I've got an idea to make a mini valentine pizza in my silicone mold (check up my previous post about Heart Cakes).
That was an enjoyable and quick baking. The mini pizzas were so cute. We ate them all! Here is a recipe of the one-bite Valentine snack.

Valentine's Day recipe. Mini Heart Pizza
baked in a Lekue heart silicone mold

Take a small piece of dough and expand it to the mold with your fingers.

Add your favorite filling. Mine was tomato, olives, salami and cheese.
Bake it for 15-20 minutes. I've done 3 molds like on the picture.

I use different silicone products by Lekue company. My next purchase will be a mold for 3D chocolates.

Holiday Baking

This weekend I tried out my new Lekue silicone molds.

Mini hearts mold allowed me to bake the nice biscuits cakes as on the photo below. Before filling the mold with a white dough I drew some designs with cocoa dough in the mold bottom.

The Imperial Queen mold inspired me to making a multi layer cake. Each layer contains different fruits and berries like apples, citrus and red bilberry. For cream I used condensed milk whipped with butter.

The molds are 100% platinum silicone made by Lekue company. It is a 15 years warranty product.
