Candy Bouquets
I have started making candy bouquets for fun. Just watch people triyng to recognize a familiar thing that looks strange from the first look. It's like a quiz game, answering a question "What is it made of". It works for fruit carving arrangements and for candy bouquets. And that amazes people much.
There are two websites what helped me to learn the techniques of candy bouquets making.
The Incredible Edible Crafts by Lana Glass with a plenty of free candy projects
Allasson.ru by Elena Shipilova with free lessons (making candy cones, fixing to sticks and packing candies, etc)
E-books about making sweet candy and chocolate arrangements provide more details:

How to Make Candy Bouquets For Fun and Profit. The book about making candy arrangements by Lana Glass.
E-book + bonus

Gifts Made From Candies. Secret of Assembling. The E-book by russian author Olga Orlova.

The books give ideas on making themed candy bouquets for wedding, birthday, baby shower, Christmas and other occasions.
In my blog there are some bouquets I have made following the instruction of Lana Glass and Elena Shipilova.
